
I am a big fan of any dish that reveals a pleasant little surprise when I bite into it. Whether it's a burger, a pepper, or that oh-so-cheesy (pause for a moment of silence for the cheese) garlic bread, stuffing adds flavor, interest and aesthetic value to any dish. This post, inspired by Vicki (Thanks Mrs. Waz), includes some of my most favorite dishes, all with a delightful center. I'm thrilled to share them with you.
Also, one more thing. The Cheese Stuffed Garlic Bread below is the reason I get up in the morning. Well…that and Quinn too, whose vocabulary has been growing as fast as he has! And, just like his mother, food related words seem to be the most important. Cookie is his current favorite (word and food). Check out the Finnster page for an adorable video! Easy Shrimp Stuffed Mushrooms: I serve these every Christmas. I never seem to make enough. They are a crowd favorite and ALWAYS disappear!
Asparagus Stuffed Chicken Breasts Wrapped in Bacon: I heart chicken. I really do. Chicken with a creamy filling, wrapped in salty bacon (I use turkey bacon) most definitely tops my comfort food chart.
Zucchini Boats Stuffed with Quinoa and Turkey: This dish is so versatile. Any grain or meat could easily be substituted or even left out for those with dietary restrictions. I am especially thinking my vegetarian friends.
Goat Cheese Stuffed Turkey Burgers: This dish, a spin on my Healthy Pepper and Onion Turkey Burger, includes a goat cheese center that is sure to melt in your mouth.
Cheese Stuffed Garlic Bread: I made this for dinner one night. I am
Turkey Breast with Sausage and Apple Stuffing: If you are looking for a quick weeknight meal, this may not be the best bet. BUT, make it for a Sunday family dinner or a holiday. The stuffing is to die for. OR, skip the turkey and just make the stuffing as part of your holiday meal.
Baked Stuffed Peppers: Here's a classic. Based on my stepmother's suggestion, I add corn kernels to give it a little crunch and sweetness in each bite.
Cod with Crab Stuffing: Seriously people. Fish stuffed with more fish and other cream cheesy goodness. Yum-O! Check back next week for my Crab Dip recipe!
