Blueberry Lime Granita with Cava

Serves 4-6


  • 2 cups fresh or frozen blueberries
  • 1/3 - 1/2 cup sugar (depending on desired sweetness)
  • 1/2 tsp lime zest
  • 2 tsp lime juice
  • 3 cups cava (or other sparkling wine)


  1. Add blueberries, sugar, lime zest and lime juice to a blender or food processor and puree until smooth.
  2. Pour pureed blueberry mixture into a 7 by 11 glass baking dish. Add cava and use a fork to gently stir taking care not to let too much air escape from the wine.
  3. Place dish in the freezer on a flat surface for one hour. Remove from freezer and use a fork to scrape ice crystals from outer edges to the middle. Return to freezer for a 1/2 hour. Remove and repeat scraping process. Return to freezer for 1/2 hour increments scraping in between until a slushy-like quality is achieved.
  4. Serve with extra lime zest and blueberries if desired. Store in freezer indefinitely.
