Quick Kitchen Prep Techniques: Preparing Leeks


  1. Trim the leek: Cut the top green leafy part off. It tends to be fibrous and hard. Slice the root off. Remove the outer layer.
  2. Half the leek: Cut the leek in half lengthwise exposing the layers.
  3. Clean the leek: Hold the leek on both ends with the inside core facing up. Under running water, flex the leeks backwards allowing each layer to flip through similar to shuffling a deck of cards. 
  4. Slice the leeks: Please each half cut side down to stabilize. Slice as matchsticks (as shown) or semicircles as desired.
