One Pot Pasta: Buffalo Chicken

Serves 3-4

Ingredients

    One Pot Pasta: Buffalo Chicken
  • 8 oz rotini (or any short pasta), uncooked, rinsed in cold water to remove excess starch
  • 1 3/4 cups water
  • 1/3-1/2 cup Frank's Hot Sauce
  • 1 cup shredded carrots
  • 1/2 red onion, diced
  • 1 1/2 lb boneless skinless chicken breasts, diced
  • 2 cloves garlic, grated
  • 1/2 cup Marie's Blue Cheese Dressing
  • 2 oz cream cheese
  • Diced green onions for garnish
  • Gorgonzola crumbles

Directions

  1. Combine pasta, water, hot sauce, carrots, onions, chicken and garlic in a deep sided skillet or saucepan.
  2. Bring to a boil and cook for 10 minutes, uncovered, stirring occasionally. After 10 minutes, check pasta. If it is too al dente, add 1/4 cup of water and cook for an additional 3-5 minutes, stirring occasionally.
  3. Remove from heat and stir in blue cheese dressing and cream cheese. Garnish with green onions and gorgonzola crumbles. Serve warm.
