  1. Choosing an avocado: Haas avocados from Mexican provide the best texture and flavor. Using a ripe avocado is essential. The avocado should be a dark brownish green and should be slightly soft to the touch, but not mushy or bruised. Note: you can accelerate the ripening process of a bright green very firm avocado by placing it in a sealed paper bag.
  2. Cut the avocado in half: Press a knife into the avocado in the center until reaching the pit. Run the knife completely around the avocado’s length using the pit as a guide.
  3. Remove the pit: Twist the two halves to separate them. Notice that the pit sticks to one of them. To remove the pit, aim the knife at it and whack with enough force so the knife sticks into the pit. Twist the knife to pull out the pit.
  4. Dicing or slicing the avocado: Score the avocado in a crosshatch pattern while still in the skin. Use a large spoon to scoop out the pieces directly into the serving dish.
