Clean Eating Taco Quinoa Bowls |

Ingredients
- 1 TBSP olive oil
- 1 Vidalia onion, diced
- 2 cloves garlic, grated
- 1 lb lean ground turkey
- 2 tsp smoked paprika
- 2 tsp cumin
- 1 tsp onion powder
- 1 tsp garlic powder
- salt and pepper to taste
- 2 plum tomatoes, diced
- 2 TBSP red onion, finely diced
- 3 cups cooked quinoa (to package instructions)
- 1/2-2/3 cup cilantro lime vinaigrette
- 1 avocado, diced
- torn cilantro for garnish

Directions
- Heat olive oil in a large non-stick skillet over medium heat.
- Add onions and garlic to the pan and sauté for 4-5 minutes or until onions are translucent.
- Push the onions and garlic to the outer edges of the pan making room in the center for the ground turkey meat. Add ground turkey to the center of the pan and season with the smoked paprika, cumin, onion powder, garlic powder, salt and pepper. Stir to combine and break up the meat, but keep the onions and garlic around the edges of the pan as best as you can. Sauté for 5-7 minutes, then stir to combine the meat and onions together. Cook for an additional 5 minutes adding a couple TBSP of water if the mixture looks dry.
- Turn off the heat and add the quinoa. Stir to combine.
- Transfer to a bowl. Add tomatoes, onion and vinaigrette. Top with avocado and torn cilantro.
Other optional mix-ins: sour cream, sharp cheddar cheese, red peppers, Jalepenos, crushed tortilla chips
