Quick and Easy Scones
Makes 8 large scones


  • 2 cups all-purpose flour
  • 1/3 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt 
  • 8 tablespoons salted butter, frozen and cut into chunks
  • 1/2 cup sour cream
  • 1 large egg
  • 1/2 cup dried fruit (suggested: cranberries)
  • 1 tsp sugar for topping
Quick and Easy Scones


  1. Preheat oven to 400 degrees.
  2. Combine flour, sugar, baking powder, baking soda and salt in a food processor. Pulse a couple times. Add the butter and process until crumbly. Add the sour cream and egg to the food processor and process until a dough ball forms. Remove the blade and use your hands to press the dough against the processor into a ball. 
  3. Place on a lightly floured surface and pat into a 7- to 8-inch circle about 3/4-inch thick. Sprinkle with remaining 1 tsp. of sugar. Use a sharp knife to cut into 8 triangles; place on a cookie sheet (preferably lined with parchment paper), about 1 inch apart. 
  4. Bake until golden, about 15 to 17 minutes. Serve warm or at room temperature with jam or butter.
Note: If you do not have a food processor, the butter can be grated by hand and combine into the dry ingredients with fingers. This is painstaking and time consuming, but doable.  The food processor makes this recipe SUPER easy!
