Mini Muffins |
Ingredients
- Non-stick cooking spray
- 2 cups all-purpose flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup white sugar
- 1 egg, beaten
- 1/2 tsp vanilla extract
- 1 cup milk
- 1/4 cup vegetable oil
- 1/4 cup golden raisins (optional)
- 1 apple, peeled, cored and diced (or any desired fruit)
- 1/4 cup brown sugar
Directions
- Preheat oven to 375 degrees. Coat a mini muffin tin with non-stick cooking spray.
- Combine the flour, baking powder, salt and sugar in a large bowl. Make a well in the center and set aside. In a small bowl, combine egg, vanilla, milk and oil. Add to the dry ingredients and combine with a fork. Fold in the raisins and apples.
- Spoon about 1 TBSP of the batter into each mini muffin tin. Sprinkle the brown sugar evenly over muffins. Each muffin should get about a 1/4 tsp of brown sugar, but this does not have to be exact. Add more or less if desired.
- Bake for 11-13 minutes, or until golden. Serve warm.
Note: Add one cup of any fresh fruit, 1/2 cup of any chopped nuts or 1/4 cup of any dried fruit. One cup of shredded sharp cheddar cheese or crumbled bacon can be added for a more savory muffin.
