Quinoa with Apples, Goat Cheese and Cranberries |
Ingredients
- 3 cups cooked quinoa
- 1 1/2 tablespoons chopped fresh rosemary leaves
- 1 medium green apple, diced, cored and peeled
- 1/3 cup dried cranberries
- 1/2 cup chopped walnuts
- 6 oz goat cheese crumbles
- 1 cup apple cider vinaigrette
Directions
- Combine quinoa, rosemary, apple, cranberries and walnuts in a medium bowl. Stir to combine. Dress with apple cider vinaigrette and toss to coat. Fold in goat cheese crumbles.

Wow this sounds so good! I am obsessed with Quinoa and use it instead of rice or pasta in all sorts of meals. Thanks for giving me another idea! Looking forward to trying this, the goat cheese sounds so good!
