Gluten-Free Peanut Butter and Jelly Cookies
Makes 12 cookies or 6 sandwiches

Ingredients

  • 1 cup peanut butter
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 1/3 cup any desired jelly or jam

Directions

  1. Preheat oven to 350 degrees. Line a cookie sheet with parchment paper. 
  2. Combine peanut butter and sugar in a bowl and blend with a stand or hand mixer until well combined. Add vanilla and egg and continue to blend using the hand mixer.
  3. To make sandwich cookies, roll a TBSP of dough in your hand and place on parchment lined cookie sheet.  Roll the back side of a fork in a small pile of sugar.  Press the back side of the fork into the cookie twice in opposing directions to create a cross-hatch pattern.  Bake for 8 minutes.

  5. To make the thumbprint cookies, roll a TBSP of dough in your hand and place on parchment lined cookie sheet.  Use your thumb to press an indent into the center of the cookie.  Place 1/2 tsp of jelly in the center.  Bake for 8 minutes.
