Baked Stuffed Peppers |
Makes 4 peppers
Ingredients
- 4 red peppers
- 1 TBSP olive oil
- 1 Vidalia onion, chopped
- 2 garlic cloves, grated
- 1 lb lean ground turkey
- 1 TBSP Italian seasoning
- 2 cups brown rice, cooked
- 1 cup corn kernels (optional)
- 3 cups prepared marinara sauce
- Parmesan cheese for serving
Directions
- Preheat the oven to 350 degrees. Cut the tops off the peppers, core and remove all seeds. Set aside.
- Heat olive oil over medium heat in a large skillet. Add the onions and garlic to the pan and cook for 4-5 minutes or until onions start to wilt. Add the turkey to the pan and cook for 7 minutes or until no longer pink. Remove from heat and add seasoning, rice, corn, 1 cup of the prepared tomato sauce (reserve the rest for later) and salt and pepper to taste. Carefully stuff the pepper cavities with the mixture.
- Place peppers so they fit snug and remain standing up in a baking dish. Pour the remaining tomato sauce over the peppers. Cover with foil and bake for 40-45 minutes.
- Serve with sauce spooned on the peppers and sprinkle with extra Parmesan cheese if desired.
