Baked Stuffed Peppers
Baked Stuffed Peppers
Makes 4 peppers

Ingredients

  • 4 red peppers
  • 1 TBSP olive oil
  • 1 Vidalia onion, chopped
  • 2 garlic cloves, grated
  • 1 lb lean ground turkey
  • 1 TBSP Italian seasoning
  • 2 cups brown rice, cooked
  • 1 cup corn kernels (optional)
  • 3 cups prepared marinara sauce
  • Parmesan cheese for serving

Directions

  1. Preheat the oven to 350 degrees. Cut the tops off the peppers, core and remove all seeds. Set aside.
  2. Heat olive oil over medium heat in a large skillet. Add the onions and garlic to the pan and cook for 4-5 minutes or until onions start to wilt. Add the turkey to the pan and cook for 7 minutes or until no longer pink. Remove from heat and add seasoning, rice, corn, 1 cup of the prepared tomato sauce (reserve the rest for later) and salt and pepper to taste. Carefully stuff the pepper cavities with the mixture.
  3. Place peppers so they fit snug and remain standing up in a baking dish. Pour the remaining tomato sauce over the peppers.  Cover with foil and bake for 40-45 minutes.
  4. Serve with sauce spooned on the peppers and sprinkle with extra Parmesan cheese if desired.
