Slow Cooker Buffalo Chicken Lasagna |
Ingredients
- 2 1/2 cups prepared tomato sauce
- 2/3 cup hot sauce
- 1 pepper, diced (any color)
- 1 Vidalia onion, diced
- 2 lbs boneless skinless chicken breast, cooked and diced or shredded
- 1 12 oz jar refrigerated blue cheese dressing
- 1 1/2 cups shredded cheese (I used sharp cheddar and mozzarella, but you could try a Mexican blend too)
- 1/4 cup chicken stock
- 1/4 cup blue cheese crumbles
- 8 lasagna noodles, uncooked and broken to fit in slow cooker.
Directions
- In a small bowl, combine the tomato sauce and hot sauce.
- In your slow cooker, layer in the following order: 1/2 the sauce mixture, 1/2 the chicken, 4 lasagna noodles, 1/2 the blue cheese dressing, 1/2 the peppers and onions and half of the shredded cheese mixture. Repeat the layers and finish with the gorgonzola crumbles on top.
- Cook in slow cooker for 3 hours on high. Serve warm.
