Clean Eating Slow Cooker Chicken and Apples
Serves 3

Ingredients

  • ½ cup apple cider vinegar
  • ¼ cup olive oil
  • 1 cup chicken stock (make sure to check ingredients, get one without added sugar)
  • 2 boneless skinless chicken breasts
  • 2 TBSP raw honey
  • 2 apples, chopped (any variety suggested: gala or honey crisp)
  • 2 Vidalia onions, chopped
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ TBSP rosemary, chopped

Directions

  1. Combine all ingredients in the slow cooker and cook on low for 6 hours or high for 3-4 hours.
  2. (optional step) Transfer liquid to a saucepan and simmer for 15 minutes to reduce liquid and produce a thicker sauce. Serve over brown rice.
