|Buffalo Chicken Quinoa|
- 3 cups of cooked quinoa
- 2 boneless, skinless chicken breasts, cooked and diced
- 1/2 cup (or more) of hot sauce
- 1 cup shredded carrots
- 3/4 cup refrigerated blue cheese dressing
- 2-3 oz of gorgonzola crumbled cheese
- In a medium bowl, combine all ingredients. Serve warm or cold. Drizzle with extra hot sauce and gorgonzola crumbles if desired.
