Buffalo Chicken Quinoa
Serves 3-4

Ingredients

  • 3 cups of cooked quinoa
  • 2 boneless, skinless chicken breasts, cooked and diced
  • 1/2 cup (or more) of hot sauce
  • 1 cup shredded carrots
  • 3/4 cup refrigerated blue cheese dressing
  • 2-3 oz of gorgonzola crumbled cheese

Directions

  1. In a medium bowl, combine all ingredients. Serve warm or cold.  Drizzle with extra hot sauce and gorgonzola crumbles if desired.
