Buffalo Chicken Meatballs |
Makes 20-25 cocktail-sized meatballs
Ingredients
For meatballs
- 1/4 cup refrigerated blue cheese dressing
- 1/4 cup hot sauce
- 1/3 cup shredded carrots
- 1/4 cup Panko bread crumbs
- 1/3 cup sharp cheddar cheese, freshly grated
- 3/4 lb lean ground chicken (or turkey)
For dip
- 1/4 cup refrigerated blue cheese dressing
- 1/4 cup hot sauce
Directions
- Preheat oven to 350 degrees. Coat a large baking sheet with non-stick cooking spray.
- In a medium mixing bowl, combine all ingredients for meatballs using fingers to incorporate well. Bake for 15 minutes.
- In a small mixing bowl, combine the ingredients for the dip. Serve meatballs hot as a cocktail or as a sandwich as shown below.
