Buffalo Chicken Meatballs
Buffalo Chicken Meatballs
Makes 20-25 cocktail-sized meatballs

Ingredients

  • Non-stick cooking spray

For meatballs

  • 1/4 cup refrigerated blue cheese dressing
  • 1/4 cup hot sauce
  • 1/3 cup shredded carrots
  • 1/4 cup Panko bread crumbs
  • 1/3 cup sharp cheddar cheese, freshly grated
  • 3/4 lb lean ground chicken (or turkey)

For dip

  • 1/4 cup refrigerated blue cheese dressing
  • 1/4 cup hot sauce 

Directions

  1. Preheat oven to 350 degrees. Coat a large baking sheet with non-stick cooking spray.  
  2. In a medium mixing bowl, combine all ingredients for meatballs using fingers to incorporate well.  Bake for 15 minutes.
  3. In a small mixing bowl, combine the ingredients for the dip.  Serve meatballs hot as a cocktail or as a sandwich as shown below.
