Buffalo Chicken Grilled Cheese Sandwich |
Ingredients
- 1 oz mozzarella cheese, shredded
- Frank’s Hot Sauce, to taste
- 4 TBSP refrigerated blue cheese dressing
- ½ cup cooked chicken, shredded or diced
- 2 oz sharp cheddar cheese, sliced
- 2 slices white bread (suggested: sourdough
- 1 TBSP butter (or non-stick cooking spray for the lighter version.)
Directions
- In a bowl, combine 2 TBSP blue cheese dressing, cooked chicken, hot sauce and mozzarella cheese.
- Spread 1 TBSP of the blue cheese dressing on one slice of bread. Place ½ of the sliced cheddar cheese over it. Layer chicken mixture and then the rest of the cheese. Spread the last TBSP of the blue cheese dressing on the second piece of bread and SMOOSH!
- If you have a Panini press, use it! (I got one for Christmas!) If not, heat a non-stick skillet to medium. Spray with cooking spray and place sandwich in skillet. Use a canned good (or something heavy) to press down sandwich. Flip after 5-7 minutes. Spray the skillet again before flipping. Cook for another 2-3 minutes. Note: the second side always cooks faster than the first. Serve warm.
