Roasted Garlic Cauliflower from Top Ate on Your Plate
Serves 2


  • 1 head of cauliflower, cut into bite sized pieces
  • 1 Vidalia onion, chopped
  • 1 tsp garlic salt
  • 1 TBSP olive oil
  • 2 cloves garlic, grated
  • ¼ cup Parmesan chesse, freshly grated


  1. Preheat oven to 425 degrees. Toss cauliflower, onions, garlic salt, olive oil and grated garlic in a medium bowl or Ziploc bag. Spread out in a single layer on a baking sheet.
  2. Bake for 30 minutes, tossing once. Sprinkle Parmesan cheese over cauliflower and bake for an additional 5 minutes. If desired, broil for one minute to achieve golden brown color.
Note: The cauliflower in this recipe will reduce by about half, so cook twice as much cauliflower as you wish to prepare.  One head will serve about two people.
