Honey Roasted Sweet Potato Fries

Ingredients

  • Nonstick cooking spray
  • 2 medium sweet potatoes, sliced into sticks or wedges
  • 1 1/2 TBSP olive oil
  • 1 TBSP honey
  • 2 tsp fresh lemon juice
  • ½ tsp garlic powder
  • 1/2 tsp salt

Directions

  1. Preheat oven to 350 degrees. Coat a baking sheet with non-stick spray.
  2. In a small bowl, whisk together olive oil, honey and lemon juice. Combine the potato sticks with the marinade in a Ziploc bag and toss to coat. Spread the potatoes out on the cookie sheet and sprinkle with the salt and garlic powder. Bake, stirring occasionally, for about 1 hour, until potatoes are tender.
Serving with Healthy Pepper and Onion Turkey Burgers.
