Quick and Healthy Huevos Rancheros from Top Ate on Your Plate |
Ingredients
- Non-stick cooking spray
- 1 whole wheat low carb tortilla
- 1 egg
- 1 oz shredded sharp cheddar cheese
- 1-2 tsp chopped cilantro
- 2 TBSP fresh salsa
- sliced avocado or guacamole
- lime wedge for serving
Directions
- Heat a non-stick skillet over medium heat. Coat with non-stick cooking spray. Place tortilla in skillet and cook for 3-4 minutes or until it starts to turn golden brown on the bottom.
- Crack egg onto the tortilla in the skillet. Cook for 5-6 minutes or until the whites are no longer runny. Flip over in skillet. If you like a runny yolk, remove from pan after a minute. If you like a solid yolk, cook for up to 4 minutes. Immediately sprinkle with shredded cheese so it will melt. Serve warm with chopped cilantro, salsa, avocado and lime wedge.
