Balsamic Glazed Portobella on a Bun from

Makes 2 sandwiches

Ingredients:

  • 1 tsp olive oil
  • 2 portobella mushroom, stem removed
  • 2 TBSP balsamic vinegar
  • 1 tsp soy sauce
  • 1 tsp rosemary, chopped
  • 3 oz goat cheese
  • 2 buns, sliced
  • 2 TBSP roasted garlic artichoke aioli
  • roasted red pepper, sliced and seeds removed
  • sliced tomato (optional)

Directions

  1. Heat tsp of olive oil in a medium non-stick skillet over medium heat. Combine rosemary, soy sauce and balsamic vinegar in a small mixing bowl. Dip top side of mushroom in balsamic mixture and place in hot skillet top side down. Pour remaining balsamic mixture over the bottom side and allow to soak in. Flip after 4-5 minutes. Layer cheese on mushroom to allow for melting. Cook for 3-4 more minutes. 
  2. Spread aioli on both sides of bun. Layer pepper on both sides. Add tomato if desired. Place hot mushroom on sandwich. Serve warm.
