Avocado Fried Egg
Avocado Fried Egg from Top Ate on Your Plate
Makes 2 avocado halves


  • 1 tsp olive oil
  • 1 avocado
  • 2 large eggs
  • salt and pepper to taste
  • ¼ cup water
  • chopped tomato
  • chopped cilantro
  • chopped avocado


  1. Heat olive oil in medium non-stick skillet over medium heat. Cut about a 1/4 inch slice off both sides of the avocado so when it sits on the counter is lies flat and even without rolling around. 
  2. Cut avocado lengthwise and remove pit. You should be able to see through a 1 inch circular hole. Scoop out enough flesh from the each half so that each egg will fit without overflowing. Test it by placing the avocado on a plate and pouring ¼ cup of water into the avocado. 
  3. Place each half into the skillet. Crack an egg in a measuring cup and pour into the avocado. Season with salt and pepper. Add ¼ cup of water to skillet and cover. Cook for 10 minutes or until yolks are of desired firmness.
  4. Serve warm with tomatoes, avocado and cilantro.
