Ingredients
- 1 tsp olive oil
- 1 avocado
- 2 large eggs
- salt and pepper to taste
- ¼ cup water
- chopped tomato
- chopped cilantro
- chopped avocado
Directions
- Heat olive oil in medium non-stick skillet over medium heat. Cut about a 1/4 inch slice off both sides of the avocado so when it sits on the counter is lies flat and even without rolling around.
- Cut avocado lengthwise and remove pit. You should be able to see through a 1 inch circular hole. Scoop out enough flesh from the each half so that each egg will fit without overflowing. Test it by placing the avocado on a plate and pouring ¼ cup of water into the avocado.
- Place each half into the skillet. Crack an egg in a measuring cup and pour into the avocado. Season with salt and pepper. Add ¼ cup of water to skillet and cover. Cook for 10 minutes or until yolks are of desired firmness.
- Serve warm with tomatoes, avocado and cilantro.
