Ingredients

  • 1 can chickpeas, 1 TBSP of the water from the can reserved 
  • 1/8-1/4 cup olive oil 
  • Juice of half a lemon 
  • 1/2 tsp of salt (more if desired) 
  • Cumin to taste (add a TBSP and taste. Add more if desired) 
  • 1 whole roasted red pepper

Directions

  1. Purée chickpeas, olive oil, lemon juice, salt and cumin in food processor until smooth. 
  2. Then add 1 whole roasted red pepper from a jar and pulse 5-10 times. 
Note: I do not use tahini, a traditional hummus ingredient, because I don’t think it needs it and it cuts down on calories. One TBSP can be added, if preferred.
