|Roasted Red Pepper Hummus from|
Top Ate on Your Plate
- 1 can chickpeas, 1 TBSP of the water from the can reserved
- 1/8-1/4 cup olive oil
- Juice of half a lemon
- 1/2 tsp of salt (more if desired)
- Cumin to taste (add a TBSP and taste. Add more if desired)
- 1 whole roasted red pepper
- Purée chickpeas, olive oil, lemon juice, salt and cumin in food processor until smooth.
- Then add 1 whole roasted red pepper from a jar and pulse 5-10 times.
