Roasted Garlic Artichoke Aioli


  • 1 medium head of garlic, top sliced off
  • 1 tsp olive oil
  • 1/2 cup mayo 
  • 2 TBSP lemon juice 
  • 4 artichoke hearts quarters, cooked from a can or thawed from frozen 
  • salt to taste 


  1. Preheat oven to 400 degrees.  Drizzle the head of garlic with olive oil and wrap in aluminum foil.  Bake in oven for 45 minutes or until garlic is soft.  Remove cloves from the skin of the garlic.
  2. Process all ingredients in a food processor until smooth.  Spread over sandwiches or serve as a dip with veggies or chips.
