|Fifty Calorie Pumpkin Mini Muffins |

Makes 40 mini muffins
- 1 15 oz can pure pumpkin
- 1 box of yellow cake mix
- Preheat oven to 350 degrees. Spray a mini muffin tin with non-stick spray.
- Combine the two ingredients in a medium mixing bowl until smooth with no lumps. Note that the batter will seem very sticky. This is normal.
- Using a mini muffin tin, place about 1 TBSP of batter in each cup. Bake in oven for 12-13 minutes. Serve with a homemade pumpkin spice latte!
