Serves 10-12


  • Non-stick spray
  • 1 15 oz can pure pumpkin 
  • 1 12 oz can evaporated milk 
  • 3 eggs 
  • 1 ½ cups sugar 
  • 4 tsp pumpkin pie spice 
  • ½ tsp salt 
  • 1 package of yellow cake mix 
  • ¾ cup chopped peacans 
  • 1 cup of butter, melted 
  • Whipped topping (optional) 


  1. Preheat oven to 350 degrees. Coat a 13x9x2 glass dish with non-stick spray. 
  2. Combine pumpkin, evaporated milk, eggs, sugar, pumpkin pie spice and salt in a medium mixing bowl. Transfer into sprayed baking dish. Sprinkle dry cake mix evenly over pumpkin mixture. Top with pecans. Pour melted butter over top evenly. 
  3. Bake in preheated oven for 50-55 minutes. Cool completely, refrigerate and serve cold with whipped cream, if desired.
