Cilantro Lime Rice
Cilantro Lime Rice from Top Ate on Your Plate
Serves 4

Ingredients

  • 2 cups chicken stock (or you could use water if you want)
  • 1 cup long grain white or brown rice
  • 1 tsp salt
  • juice of 2-3 limes
  • 2-3 TBSP fresh cilantro, chopped
  • 2 plum tomatoes chopped
  • ½ can corn kernals (optional)
  • ½ can black beans (optional)
  • 1-2 tsp smoked paprika (optional)

Directions

  1. Bring chicken stock to a boil in a medium saucepan over high heat. Add rice and salt. Simmer for 20 minutes until rice has absorbed all liquid. Fluff with a fork.
  2. Fold in lime juice, cilantro, tomatoes, corn and beans. Add smoked paprika if a smoky flavor is desired.
