Cilantro Lime Rice from Top Ate on Your Plate |
Ingredients
- 2 cups chicken stock (or you could use water if you want)
- 1 cup long grain white or brown rice
- 1 tsp salt
- juice of 2-3 limes
- 2-3 TBSP fresh cilantro, chopped
- 2 plum tomatoes chopped
- ½ can corn kernals (optional)
- ½ can black beans (optional)
- 1-2 tsp smoked paprika (optional)
Directions
- Bring chicken stock to a boil in a medium saucepan over high heat. Add rice and salt. Simmer for 20 minutes until rice has absorbed all liquid. Fluff with a fork.
- Fold in lime juice, cilantro, tomatoes, corn and beans. Add smoked paprika if a smoky flavor is desired.

I imagine this would be easy to double and a good dish to take to a potluck.
